
I’ve always loved eating kiwis in my everyday routine — they’re just so fresh, light, and naturally sweet. And at some point, especially now with summer coming up, I thought how amazing it would be to turn them into popsicles. Since I’m currently on a diet and still absolutely love ice cream, it just made so much sense to combine the two. And honestly, it turned out to be such a good idea. These popsicles are refreshing, feel like a real treat, and are so much lighter than regular ice cream. You can easily recreate this recipe, and I promise you won’t regret it.
Ingredients:
- 2 cups water or unsweetened coconut water
- 1 cup freshly squeezed lemon juice
- 1–2 tbsp honey or stevia (to taste)
- 1½ cups kiwi, peeled and chopped
- Optional: a few fresh mint leaves

1. Prepare the kiwis
Start by peeling the kiwis and cutting them into small pieces. The smaller the pieces, the easier they will blend into a smooth texture later. Kiwi naturally brings a light sweetness and a refreshing flavor, which makes these popsicles feel fresh and not heavy at all — perfect when you want something light and guilt-free.

2. Squeeze the lemon juice

3. Blend everything together

4. Blend until smooth
Blend everything until the mixture is completely smooth and slightly creamy. It should look fresh, vibrant, and naturally light. Take a quick taste — this is your moment to adjust the sweetness if needed. Keeping it only lightly sweet helps your body stay used to more natural flavors, which can be really helpful when you’re trying to eat healthier.

5. Pour into molds
Carefully pour the mixture into popsicle molds. Leave a little space at the top, since the liquid will expand slightly as it freezes.
If you don’t have molds, small cups work just as well.

6. Freeze
Insert the sticks and place everything in the freezer for at least 4–6 hours, or ideally overnight. As they freeze, they turn into a refreshing, light treat that feels like a dessert — but without the heaviness of traditional ice cream.

7. Release and enjoy
Before removing the popsicles, run the molds under warm water for a few seconds. This helps them slide out easily. Then just enjoy them right away.
