
There’s nothing better than a cold, creamy popsicle on a hot summer day. I wanted something that tastes like a real treat — smooth, fruity, and refreshing — but without all the unnecessary sugar and calories.
This recipe is exactly that. It combines the fresh sweetness of mango with a creamy yogurt texture, giving you a light, satisfying dessert that actually fits into a healthy lifestyle.
Ingredients for 6 popsicles
- 250 g ripe mango, fresh or thawed frozen mango
- 300 g plain skyr
- 120 g Greek yogurt, 3–5% fat
- 20 g honey
- 10 ml lemon juice
- 40 ml milk, 1.5% fat
- 30 g light cream cheese

1. I start with the mango
I add the mango to a blender and blend it until it turns into a very smooth, bright mango purée.
I don’t want big fruit pieces in this recipe, because they can freeze too hard and make the popsicles feel icy instead of creamy.
A smooth mango base gives the popsicles a fresh, fruity flavor and helps the final texture become more even and soft.
If I use frozen mango, I make sure it is fully thawed first so it blends easily.

2. I add the creamy yogurt base
Now I add the skyr, Greek yogurt, light cream cheese, milk, honey, and lemon juice directly to the mango purée.
The skyr is important because it gives the popsicles a good amount of protein without adding many calories.
The Greek yogurt and light cream cheese make the mixture smoother, richer, and less icy after freezing.
The honey adds a gentle sweetness, and the lemon juice makes the mango taste fresher and more intense.

3. I blend everything into one thick, creamy mixture
I blend everything for about 30 to 60 seconds until the mixture looks completely smooth, creamy, and well combined.
The texture should look like a thick smoothie or a creamy yogurt cream — not watery, but also not so thick that it is difficult to pour.
This step is important because the better the mixture is blended, the better the popsicles will freeze.
I want the skyr, yogurt, mango, and cream cheese to become one smooth base with no lumps.

4. I fill the popsicle molds carefully
I pour the mango yogurt mixture evenly into 6 popsicle molds.
After filling them, I gently tap the molds on the counter a few times to remove small air bubbles and help the mixture settle properly.
Then I insert the popsicle sticks and make sure everything sits straight, so the popsicles freeze neatly and are easy to remove later.
The mixture should look creamy, thick, and smooth before going into the freezer.

5. I freeze them and serve them with the right texture
I place the popsicle molds in the freezer for at least 8 hours, or overnight, until they are completely firm.
When I want to eat one, I don’t eat it straight from the freezer immediately, because it can be too hard at first.
I let the popsicle sit at room temperature for about 3 minutes, and that makes a big difference.
After a short thawing time, the texture becomes creamier, softer, and much closer to a frozen yogurt popsicle instead of a hard ice block.
