We’ve all had those moments when a craving for something sweet suddenly hits, but a bag of candy isn’t exactly the healthiest choice. That’s why I love making these Healthy Sour Apple Rings. They have the perfect balance of sweetness and tanginess, a fun chewy texture, and are made with just a handful of simple ingredients. Whether you’re looking for a lighter treat, a fun snack to keep in the fridge, or a healthier alternative to store-bought gummies, these homemade apple rings are a delicious option that both kids and adults will enjoy.
Ingredients (12–14 rings)
- 250 ml unsweetened apple juice
- 20 g gelatin powder
- 2 tbsp fresh lemon juice (30 ml)
- 1 tsp honey (7 g)
Optional Sour Coating
- 1 tbsp granulated sweetener
- ½ tsp citric acid

1. Let the gelatin bloom
Pour the apple juice into a small saucepan. Add the lemon juice and honey, then stir well until the honey is mixed in. Sprinkle the gelatin evenly over the top of the liquid instead of dumping it all in one spot. Let it sit for about 2–3 minutes. The mixture will start to look a little thick and wrinkly on top — that is exactly what you want. This step helps the gummies turn out smooth instead of clumpy.

2. Warm it gently
Place the saucepan over low heat. Stir slowly and constantly while the mixture warms up. You only want it warm enough for the gelatin to dissolve completely. This usually takes 3–5 minutes. Do not let it boil, because boiling can weaken the gelatin and make the rings less firm. Once the liquid looks smooth, glossy, and there are no visible gelatin bits left, remove it from the heat.

3. Fill the molds carefully
Place your silicone ring molds on a small tray or plate before filling them. This makes it easier to move them to the fridge without spilling. Slowly pour the warm apple mixture into the molds. You can also use a small spoon, measuring cup, or dropper if that feels easier. Tap the mold gently on the counter a few times to release air bubbles and help the mixture settle evenly.

4. Chill until completely firm
Transfer the tray with the molds to the refrigerator. Let the rings chill for at least 2–3 hours. They should feel firm, bouncy, and easy to remove from the mold. If they still feel too soft, leave them in the fridge longer. For the best chewy texture, you can let them set overnight.

5. Remove, coat, and store
Carefully push the apple rings out of the silicone molds. If you want them more sour and candy-like, lightly coat them with a small mix of sugar or sweetener and citric acid right before serving. Do not coat them too early, because the coating can pull moisture from the gummies and become wet. Store the rings in an airtight container in the fridge for up to 5 days.
