
Whenever I’m craving something sweet but want a lighter option than candy, I make these Green Tea, Lemon & Ginger Gummies. They’re soft, chewy, and packed with fresh flavor from lemon, ginger, and green tea. I love keeping a batch in the fridge for an afternoon treat or a little something sweet after dinner. They’re simple to make, incredibly refreshing, and honestly hard to stop eating once you start. 🍋🍵✨
Ingredients
- 250 ml hot water
- 1 green tea bag
- 20 g gelatin powder
- 2 tbsp fresh lemon juice (30 ml)
- 1 tsp honey (7 g)
- 1 tsp freshly grated ginger (about 5 g)
Optional Sour Coating
- 1 tbsp granulated sweetener
- ½ tsp citric acid

Step 1: Brew the green tea and build the flavor base
Place 1 green tea bag in a mug or heatproof measuring cup and pour 250 ml hot water over it. Let it steep for about 5 minutes so the tea becomes strong enough to taste in the gummies. Remove the tea bag, then pour the tea into a small saucepan. Add the fresh lemon juice, honey, and grated ginger. Stir well until the honey is fully dissolved and the mixture smells fresh, slightly tangy, and gingery.

Step 2: Sprinkle in the gelatin and let it bloom
Sprinkle the 20 g gelatin powder slowly and evenly over the surface of the tea mixture. Try not to dump it into one spot, because that can create clumps. Let it sit for 2–3 minutes without stirring. During this time, the gelatin absorbs the liquid and the top may look thicker, wrinkly, or slightly uneven. That is exactly what should happen and helps the gummies become smooth and chewy.

Step 3: Warm gently until smooth
Place the saucepan over low heat. Stir slowly and constantly while the mixture warms up. You only want it warm enough for the gelatin to dissolve completely, not boiling. This usually takes 3–5 minutes. Once the liquid looks smooth, glossy, and there are no visible gelatin bits left, remove it from the heat. If you want a very smooth texture, you can strain the mixture to remove tiny ginger pieces.

Step 4: Fill the molds and chill
Place your silicone molds on a tray or plate before filling them so they are easy to move. Carefully pour the warm mixture into the molds using a spoon, measuring cup, or dropper. Tap the molds gently on the counter to release air bubbles. Transfer them to the fridge and chill for at least 2–3 hours, or overnight for the best chewy texture.

Step 5: Remove, coat, and store
Once the gummies are firm and bouncy, gently push them out of the molds. For a sour candy finish, mix 1 tbsp granulated sweetener with ½ tsp citric acid and lightly coat the gummies right before serving. Do not coat them too early, because the coating can become wet. Store the gummies in an airtight container in the fridge for up to 5 days.
