- 1 teaspoon fresh lemon or lime juice
- Pinch of salt
- Pinch of black pepper

- 2 large eggs
- Small amount of oil or cooking spray
For the Bowl
- 1 handful fresh baby spinach
- Chili flakes (optional)
- Everything bagel seasoning or sesame seeds (optional)

Detailed Instructions
Step 1: Prepare the Sweet Potatoes
Begin by preheating your oven to 200°C (400°F).
Wash the sweet potato thoroughly and peel it if desired. Cut it into small bite-sized cubes, approximately 1–2 cm in size. Keeping the pieces similar in size helps them cook evenly.
Place the sweet potato cubes in a mixing bowl. Add the olive oil, paprika, a pinch of salt, and black pepper. Toss everything together until each piece is lightly coated with seasoning.
Spread the cubes onto a baking tray lined with parchment paper. Make sure they are arranged in a single layer with a little space between them. This helps them roast properly instead of steaming.
Place the tray in the oven and roast for 25–30 minutes. Halfway through cooking, use a spatula to turn the cubes over. They are ready when they are tender in the center and lightly browned around the edges.
Remove from the oven and set aside.

Step 2: Prepare the Avocado
While the sweet potatoes are roasting, prepare the avocado mixture.
Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl.
Add the lemon or lime juice, salt, and black pepper.
Using a fork, gently mash the avocado until it becomes creamy. For the best texture, leave a few small chunks rather than making it completely smooth.
Taste and adjust the seasoning if needed. The citrus juice brightens the flavor and helps prevent the avocado from browning.
Set aside.

Step 3: Cook the Eggs
Place a non-stick frying pan over medium heat.
Lightly grease the pan with a small amount of oil or cooking spray.
Crack the eggs into the pan and cook them slowly. Allow the whites to become fully set while keeping the yolks soft and runny.
This usually takes about 3–4 minutes.
Season the eggs with a little salt and black pepper while they cook.
If you prefer firmer yolks, continue cooking for another minute or two. Alternatively, you can prepare poached or soft-boiled eggs instead.
Remove from the heat once cooked to your liking.

Step 4: Assemble the Bowl
Choose a medium-sized serving bowl.
Start by placing the fresh baby spinach on one side of the bowl. The warmth from the sweet potatoes and eggs will slightly soften the spinach.
Add the roasted sweet potatoes next to the spinach.
Spoon the mashed avocado beside the sweet potatoes.
Carefully place the eggs on top or to one side of the bowl.
For extra flavor and texture, sprinkle everything with chili flakes, sesame seeds, or everything bagel seasoning.

Step 5: Serve and Enjoy
Serve immediately while the sweet potatoes are still warm and the egg yolks are soft.
When eating, break the yolks and allow them to mix with the avocado and sweet potatoes. The creamy yolk creates a rich, flavorful sauce that brings all the ingredients together.
Every bite combines sweet roasted potatoes, creamy avocado, fresh spinach, and perfectly cooked eggs, creating a balanced meal that feels both nourishing and satisfying.
