Introduction
I have to be honest — I absolutely love these blueberry muffins.
I make them all the time and take them with me to work because they’re just so easy, delicious, and actually filling. For me, they’re the perfect breakfast replacement when I don’t have time but still want to eat something that feels good and satisfying.
What I really love is that they don’t feel like “diet food” at all. They taste like a real treat, but at the same time they’re packed with protein and don’t ruin your calorie goals.
And not gonna lie… sometimes I don’t even save them for breakfast. I just sit on the couch, grab one (or two 😅), and enjoy them as a healthy dessert.

- 150 g skyr or low-fat quark
- 1 egg
- 50 g oat flour
- 30–50 g sweetener (or honey)
- 1 tsp baking powder
- 50 ml milk (or plant-based milk)
- 80 g blueberries (fresh or frozen)
- Optional: vanilla extract

You’re basically saving around 200 to 300 calories per muffin, which is actually a huge difference, especially when you really think about it.
Because in reality, instead of eating just one store-bought muffin, you could have two of these homemade ones for the same calories and feel just as satisfied — if not even more.
