Gut Healthy Overnight Oats with Flaxseed and Berries

Some mornings, I just don’t have the time—or energy—to make a complicated breakfast. I want something that’s quick, nourishing and actually keeps me full until lunch. That’s exactly why this Gut Health Flax & Oat Pudding has become one of my favorite make-ahead breakfasts.

I love preparing it the night before because I know I’ll wake up to a creamy, wholesome breakfast that’s ready to enjoy. It’s packed with fiber, fresh berries and gut-friendly ingredients, but honestly, the best part is how delicious it tastes. It feels like a little treat in the morning while giving my body exactly what it needs to start the day feeling its best. 💛

Ingredients

  • 20 g ground flaxseed
  • 35 g rolled oats
  • 150 ml plain kefir
  • 50 ml unsweetened almond milk
  • 1 tbsp plain Greek yogurt
  • 1 tsp chia seeds
  • ½ tsp cinnamon
  • ½ tsp vanilla extract

Berry Layer

  • 60 g blueberries
  • 40 g raspberries
  • 1 tsp lemon juice

Toppings

  • Fresh cherries or blueberries
  • 1 tbsp chopped walnuts
  • 1 tsp pumpkin seeds
  • Unsweetened coconut flakes (optional)

1. Mix the creamy base

I start by adding the ground flaxseed, rolled oats, chia seeds and cinnamon to a jar or small bowl. Then I pour in the kefir and almond milk, add the Greek yogurt and vanilla, and stir everything really well. I make sure to scrape the bottom and the sides so there are no dry spots or clumps left.

2. Let it thicken

Once everything is mixed, I cover the jar and place it in the fridge for at least 6 hours, but I usually leave it overnight. During this time, the oats, flaxseed and chia seeds absorb the liquid and turn into a thick, creamy pudding. In the morning, I give it another good stir. If it feels too thick, I simply add a small splash of almond milk.

3. Prepare the berry layer

For the berry layer, I place the blueberries, raspberries and lemon juice in a small saucepan. I warm them over low to medium heat for about 2–3 minutes and gently mash some of the berries with a spoon. I do not cook them for too long—I just want them soft, juicy and slightly jammy. Then I let the mixture cool completely.

4. Layer and finish

I spoon the chilled flax and oat pudding into a glass or bowl, add the cooled berry mixture on top and finish it with fresh berries, chopped walnuts, pumpkin seeds and a few coconut flakes. I like to add the toppings right before eating so they stay fresh and crunchy.

Tips for the Best Flax & Oat Pudding

  • Use ground flaxseed instead of whole flaxseed. Ground flaxseed is easier to digest and allows your body to absorb more of its nutrients.
  • Let the pudding chill overnight. While 6 hours is enough, leaving it overnight creates the creamiest texture and lets the flavors blend together beautifully.
  • Adjust the consistency before serving. If the pudding becomes too thick after chilling, simply stir in a splash of almond milk or kefir until it reaches your preferred consistency.
  • Don’t overcook the berries. Heat them just until they soften and release their juices. This keeps their fresh flavor and texture while creating a naturally sweet topping.
  • Add crunchy toppings just before serving. Walnuts, pumpkin seeds and coconut flakes stay crisp and add the perfect contrast to the creamy pudding.
  • Meal prep friendly. Make two or three jars at once and store them in the refrigerator for up to 3 days for an easy grab-and-go breakfast.
