Ingredients
- 20 g ground flaxseed
- 35 g rolled oats
- 150 ml plain kefir
- 50 ml unsweetened almond milk
- 1 tbsp plain Greek yogurt
- 1 tsp chia seeds
- ½ tsp cinnamon
- ½ tsp vanilla extract
Berry Layer
- 60 g blueberries
- 40 g raspberries
- 1 tsp lemon juice
Toppings
- Fresh cherries or blueberries
- 1 tbsp chopped walnuts
- 1 tsp pumpkin seeds
- Unsweetened coconut flakes (optional)

1. Mix the creamy base
I start by adding the ground flaxseed, rolled oats, chia seeds and cinnamon to a jar or small bowl. Then I pour in the kefir and almond milk, add the Greek yogurt and vanilla, and stir everything really well. I make sure to scrape the bottom and the sides so there are no dry spots or clumps left.

2. Let it thicken
Once everything is mixed, I cover the jar and place it in the fridge for at least 6 hours, but I usually leave it overnight. During this time, the oats, flaxseed and chia seeds absorb the liquid and turn into a thick, creamy pudding. In the morning, I give it another good stir. If it feels too thick, I simply add a small splash of almond milk.

3. Prepare the berry layer
For the berry layer, I place the blueberries, raspberries and lemon juice in a small saucepan. Then I let the mixture cool completely.

4. Layer and finish
I spoon the chilled flax and oat pudding into a glass or bowl, add the cooled berry mixture on top and finish it with fresh berries, chopped walnuts, pumpkin seeds and a few coconut flakes. I like to add the toppings right before eating so they stay fresh and crunchy.
