
Rice Krispie Treats have always been one of my favorite sweet snacks. They’re soft, chewy, crispy, and incredibly hard to resist. The only downside is that traditional versions are usually packed with sugar and don’t keep you full for very long.
That’s why I love this protein-packed version. It has the same classic marshmallow flavor and chewy texture you know and love, but with added protein to make it a little more satisfying. They’re quick to make, require no baking, and are perfect for when you’re craving something sweet without reaching for a typical dessert.
Ingredients
- 120 g mini marshmallows, sugar-free if available
- 30 g light butter
- 60 g vanilla whey protein powder
- 150 g crispy rice cereal
- 60 g creamy cashew butter
- 1 teaspoon vanilla extract
- 2 tablespoons milk of choice

Step 1: Melt the Marshmallow Base
Add the light butter and mini marshmallows to a large saucepan and place it over low heat. Stir slowly and constantly until the marshmallows melt down into a smooth, glossy mixture.
Keep the heat low so the marshmallows don’t burn or become stiff. Once everything is melted, stir in the cashew butter and vanilla extract until the mixture looks creamy and fully combined.

Step 2: Mix in the Protein Powder
Remove the saucepan from the heat and let the mixture cool for about 1 minute. Then gradually stir in the vanilla protein powder.
Add the protein powder slowly, not all at once, so it blends in smoothly without clumping. If the mixture becomes too thick, stir in the milk little by little until it becomes soft, creamy, and easy to mix.

Step 3: Fold in the Crispy Rice Cereal
Add the crispy rice cereal to the saucepan and gently fold it into the marshmallow mixture until every piece is coated.
Don’t stir too aggressively, because you want the cereal to stay light and crispy instead of crushed. The mixture should look sticky, glossy, and evenly combined.

Step 4: Press into the Pan
Transfer the mixture into a parchment-lined 8×8-inch pan. Use slightly damp hands or a spatula to gently press it into an even layer.
Press just enough to hold the bars together, but don’t pack them down too firmly. Pressing too hard can make the treats dense instead of soft and chewy.

Step 5: Cool and Slice
Let the bars cool at room temperature for 30–45 minutes, until they are firm enough to slice.
Once set, lift them out of the pan using the parchment paper and cut into 12 squares. The bars should be soft, chewy, lightly crispy, and sweet with a creamy vanilla-marshmallow flavor.
