I’m not someone who believes healthy food has to be boring—and this salad is the perfect example. It’s one of those recipes I keep coming back to because it makes me feel good every single time. Whenever I want something fresh, nourishing, and satisfying without spending hours in the kitchen, this is exactly what I make.

I love how every ingredient brings something special to the bowl. The sweetness of the pomegranate, the creamy feta, the crunchy walnuts, and the earthy beetroot come together so perfectly that it honestly never feels like I’m eating “healthy food.” It simply tastes amazing.

What makes this salad even more special to me is knowing that it’s doing something good for my body. It’s packed with ingredients that support gut health, keep me full for hours, and leave me feeling energized instead of sluggish. If there’s one salad I could eat on repeat, it would definitely be this one. 🌿

1. Prepare the Homemade Dressing
Start by making the dressing, as this allows all the delicious flavors to blend together while you prepare the salad. In a small bowl or a glass jar, combine the extra virgin olive oil, apple cider vinegar, Dijon mustard, raw honey, sea salt, and freshly ground black pepper. Whisk everything together until the dressing becomes smooth and creamy. If you’re using a jar, simply close the lid and shake well for about 20 seconds. Set the dressing aside.

2. Assemble the Fresh Salad Base
Wash and dry the lamb’s lettuce thoroughly before placing it into a large serving bowl. Add the cooked lentils and the diced beetroot, spreading them evenly over the greens. These wholesome ingredients create the perfect base, adding plenty of fiber, plant-based protein, and beautiful natural colors to your salad.

3. Layer the Delicious Toppings
Now it’s time to make your salad extra flavorful and visually stunning. Sprinkle the crumbled feta cheese evenly over the top, followed by the chopped walnuts for a satisfying crunch. Scatter the fresh pomegranate seeds over everything—they add a burst of sweetness and make the salad look absolutely gorgeous. Finish with freshly chopped parsley for a bright, fresh touch.

4. Toss Everything Together Gently
Slowly drizzle the prepared dressing over the salad. Using two large salad spoons, gently toss everything together until every ingredient is lightly coated with the vinaigrette. Be careful not to overmix, as the beetroot can color the other ingredients. A gentle toss keeps the salad fresh, vibrant, and beautifully presented.

5. Serve & Enjoy Immediately
Divide the salad between two serving bowls or plates and enjoy it while it’s fresh and crisp. For an extra gut-friendly boost, top each serving with 2–3 tablespoons of raw sauerkraut or kimchi just before serving. This colorful Power Salad is delicious on its own for a light lunch or dinner, but also pairs perfectly with grilled salmon, chicken breast, or roasted tofu for an even more satisfying meal. Every bite is packed with nourishing ingredients that support a healthy gut while tasting fresh, vibrant, and absolutely delicious. 🌿🥗✨

My Favorite Ways to Enjoy This Salad 🥗✨

One of the things I love most about this salad is how versatile it is. It’s delicious on its own, but pairing it with a protein makes it even more satisfying and balanced.

Personally, I love serving it with grilled salmon. The rich, buttery flavor of the salmon pairs perfectly with the sweet pomegranate, earthy beetroot, and creamy feta. It’s one of my favorite combinations for a nourishing lunch or light dinner.

If I’m looking for something different, I’ll often pair it with grilled chicken breast or herb-marinated tofu. Both add plenty of protein without overpowering the fresh flavors of the salad.

For an extra gut-friendly touch, I also like adding a small spoonful of raw sauerkraut or kimchi on the side. It adds a tangy flavor while providing natural probiotics that support a healthy gut microbiome.

No matter how you serve it, this salad is one of those meals that always leaves you feeling satisfied, energized, and nourished. 💚

This Power Salad has become one of my favorite healthy meals because it’s incredibly easy to make, looks beautiful, and leaves me feeling energized without feeling heavy. I love how every bite is packed with fresh flavors—from the sweetness of the pomegranate to the creamy feta and crunchy walnuts.

What I appreciate most is that it’s both satisfying and nourishing. Thanks to the combination of fiber, healthy fats, and plant-based protein, it keeps me full for hours while supporting my digestion. It’s the kind of meal that makes healthy eating feel effortless rather than restrictive.

If you’re looking for a simple recipe that’s delicious, nutrient-dense, and great for your gut, this salad is definitely one I’d recommend adding to your weekly meal rotation. 🌿🥗✨
