Salad

  • 200 g kale, stems removed and chopped
  • 500 g sweet potato, peeled and cut into 2 cm cubes
  • 200 g cooked chickpeas, drained and rinsed
  • 80 g cooked quinoa
  • 80 g crumbled feta cheese
  • 40 g walnuts, roughly chopped
  • 30 g pumpkin seeds
  • 50 g pomegranate seeds
  • 2 tbsp fresh parsley, chopped

Dressing

  • 4 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar (with the mother)
  • 1 tsp Dijon mustard
  • 1 tsp raw honey
  • 1 small garlic clove, finely grated
  • ½ tsp sea salt
  • ¼ tsp black pepper

Optional Probiotic Boost

  • 60 g sauerkraut or kimchi, served on top before eating

1. Roast the sweet potatoes until beautifully caramelized
Preheat the oven to 200°C (400°F) and line a large baking tray with parchment paper. Add the sweet potato cubes to the tray, drizzle them with 1 tablespoon of olive oil, and season with a little sea salt and black pepper. Toss everything together with your hands so each piece is lightly coated. Spread the cubes out in a single layer, giving them a little space so they roast instead of steam. Bake for 25–30 minutes, turning them halfway through, until the edges are golden and the centers feel soft and creamy.

2. Prepare the chickpeas and quinoa
While the sweet potatoes are roasting, rinse the chickpeas thoroughly under cold water and let them drain well. If your quinoa is not already cooked, prepare it according to the package instructions, then allow it to cool slightly. I like the quinoa to be warm rather than hot when it goes into the salad, because it blends beautifully with the kale without making it wilt too much.

3. Massage the kale until soft and silky
Place the chopped kale in a large salad bowl. Add 1 tablespoon of the dressing or a small drizzle of olive oil, along with a tiny pinch of sea salt. Now use clean hands to gently massage the kale for 2–3 minutes. At first it may feel quite firm, but it will soon become darker, softer, and much more tender. This little step makes such a difference and gives the salad a much more delicate, enjoyable texture.

4. Whisk together the gut-friendly dressing
In a small bowl or jar, combine the extra virgin olive oil, apple cider vinegar, Dijon mustard, raw honey, grated garlic, sea salt, and black pepper. Tips
