I Made My Own Blueberry Ice Cream – Now My Family Can’t Stop Eating It

I’ve always loved ice cream — especially anything with blueberries. There’s just something about that fresh, slightly sweet and fruity flavor that I can never get enough of. But at some point, I realized that most store-bought ice cream isn’t really the best option if you’re trying to eat a bit healthier.

So I thought, why not try making my own version? Something that still feels like a real treat, but is lighter and made with better ingredients.

And honestly, it turned out even better than I expected. Not only do I love it, but my whole family is obsessed with it now. Every time I make these popsicles, they disappear almost immediately. That’s when I knew this recipe was really worth sharing. 💜

Ingredients:

  • 1 cup blueberries
  • 1 cup low-fat vanilla Greek yogurt
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 1/4 cup unsweetened almond milk
  • A few drops of vanilla extract

Step 1: Blend the mixture

Add the blueberries, low-fat vanilla Greek yogurt, honey, lemon juice, unsweetened almond milk, and a few drops of vanilla extract to a blender. Then blend everything until the mixture is smooth and creamy. The blueberries will give it that beautiful purple color, while the yogurt makes it thick and creamy. The lemon juice brightens the flavor and keeps it from tasting too heavy, and the honey adds just enough sweetness without turning it into something overly sugary.

Step 2: Taste and adjust if needed

Once everything is blended, give it a quick taste. This is one of my favorite parts, because you can still make little changes before freezing. If you want it slightly sweeter, you can add just a tiny bit more honey. If you want it fresher, add a little more lemon juice. But if your goal is weight loss, I would keep it as light as possible and not overdo the sweetener. Usually the natural sweetness from the blueberries is already enough.

Step 3: Pour into popsicle molds

Now pour the mixture into your popsicle molds. Try not to fill them completely to the very top — leave a small bit of space, because the mixture expands slightly as it freezes. If you don’t have popsicle molds, you can also use small cups or jars and insert wooden sticks later once the mixture has started to firm up a little.

Step 4: Add the sticks

Place the popsicle sticks into the molds. If your mold has a lid that holds the sticks in place, that makes it even easier. If you’re using cups instead, you can freeze them for a short time first until the mixture is slightly thicker, then insert the sticks so they stay upright.

Step 5: Freeze

Put the popsicles into the freezer and let them freeze for at least 4–6 hours, but overnight is even better. This gives them enough time to set properly and become firm all the way through. The longer they sit, the better the texture usually is.

Step 6: Remove and serve

Once they’re fully frozen, take them out of the molds. If they don’t come out right away, just run the outside of the mold under warm water for a few seconds. That usually loosens them enough without melting them too much. Then they’re ready to eat.

Per popsicle (approx.):

  • Calories: 90–120 kcal
  • Protein: 5–7 g
  • Fat: 2–3 g
  • Carbohydrates: 12–16 g
  • Fiber: 1–2 g

One thing I always think about with desserts is whether they’re actually better than what I used to eat. I love ice cream, especially blueberry, but store-bought versions can easily have 180 to 250 calories per portion because of the cream and sugar.

When I made these popsicles, I was honestly surprised. Each one has only about 90 to 120 calories, and they still taste creamy and fresh. They feel much lighter, but still like a real treat.

For me, that’s what makes them so perfect — I can enjoy ice cream without that heavy feeling or guilt afterwards. 💜

      Do you mean adding strawberries or mango to the recipe, or replacing the blueberries completely?
      Because if you replace them, it wouldn’t really be blueberry ice cream anymore 😅
