Apple Filling
- 500 g apples, peeled and diced
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 1 tsp honey (7 g)
- 1 tsp cornstarch
Crumble Topping
- 60 g rolled oats
- 30 g ground almonds
- 20 g vanilla protein powder
- 20 g cold light butter
- 1 tbsp honey (15 g)
- 1 tsp ground cinnamon

Step 1: Prepare the Apples
Preheat your oven to 180°C (350°F) and lightly grease a small baking dish.
Peel the apples, remove the cores, and cut them into small bite-sized cubes. Place the apple pieces into a large mixing bowl and add the lemon juice, cinnamon, honey, and cornstarch.
Mix everything well until the apples are evenly coated. The lemon juice helps keep the apples fresh and brightens the flavor, while the cinnamon adds that classic warm apple pie taste. The small amount of honey enhances the natural sweetness of the apples without making the dessert overly sweet. The cornstarch helps create a thick, slightly syrupy filling as the apples bake.
Transfer the apple mixture into your baking dish and spread it out evenly.

Step 2: Make the Crumble Topping
In a separate bowl, combine the rolled oats, ground almonds, vanilla protein powder, and cinnamon.
Add the cold butter in small pieces. Using your fingertips, gently rub the butter into the dry ingredients. Keep mixing until the mixture starts to resemble coarse crumbs. You want a mixture with both small and larger crumble pieces, as this creates the best texture after baking.
Drizzle in the honey and continue mixing until small clusters begin to form. These clusters will become beautifully golden and crispy in the oven, giving the crumble its signature crunchy topping.

Step 3: Assemble the Crumble
Evenly sprinkle the crumble mixture over the apples.
Try to cover most of the fruit while still leaving a few small gaps where the apples can peek through. This allows some of the apple juices to bubble up around the edges while the topping becomes crisp and golden.
Don’t press the crumble down. Keeping it loose helps create a lighter, crunchier texture.

Step 4: Bake Until Golden
Place the dish in the preheated oven and bake for 25–30 minutes.
As it bakes, the apples will soften and release their natural juices, creating a warm, fragrant filling. At the same time, the crumble topping will turn golden brown and develop a delicious crunchy texture.
Your kitchen will smell like freshly baked apple pie, cinnamon, and toasted oats.
The crumble is ready when the topping looks golden and crisp and you can see the apple filling gently bubbling around the edges of the dish.

Step 5: Let It Cool Slightly
Remove the crumble from the oven and allow it to cool for about 10 minutes before serving.
This short resting time allows the filling to thicken slightly, making it easier to serve while also preventing it from being too hot. The flavors also become even more balanced as the crumble cools slightly.

Step 6: Serve and Enjoy
Serve warm straight from the baking dish.
For a higher-protein option, add a generous spoonful of plain Skyr on top. The cool, creamy texture pairs perfectly with the warm cinnamon apples and crunchy crumble topping.
Every spoonful gives you soft baked apples, warm cinnamon flavor, and crispy golden crumble, making it feel like a classic apple pie while being much lighter and more protein-friendly. 🍎✨

What Are the Benefits of This Healthy Apple Pie Crumble? 🍎
One of the things I love most about this recipe is that it gives you all the cozy flavors of a classic apple pie without the heavy amount of sugar and butter that usually comes with it. The apples provide natural sweetness, so you don’t need much added honey to make it taste delicious.
Another big advantage is how filling it is. Thanks to the combination of apples, oats, and almonds, it contains plenty of fiber, which helps keep you satisfied for longer and can reduce the urge to snack shortly after eating.
I also love that it’s incredibly simple to make. Most of the ingredients are pantry staples, and the entire recipe comes together in just a few minutes before going into the oven.
For me, it’s the perfect healthy dessert when I’m craving something warm, sweet, and comforting. The soft cinnamon apples combined with the crispy golden crumble topping make it feel like a real treat while still fitting easily into a balanced lifestyle. 🍏✨
