Sometimes I just crave something sweet, soft, and comforting, but I don’t want to feel heavy or guilty afterward. That’s exactly why I love this recipe so much. It has that rich, creamy cookie dough taste, with little chocolate pieces in every bite, but it’s made with simple ingredients that actually feel good to eat. It’s one of those treats that feels indulgent and cozy, yet still fits perfectly into a balanced routine. Once you try it, you’ll see how easy it is to enjoy something sweet without overthinking it 🤍🍪

Ingredients:

  • 1 can chickpeas (rinsed & drained)
  • 2 tbsp natural peanut butter
  • 1–2 tbsp maple syrup or 0-calorie sweetener
  • 2 tsp vanilla extract
  • 1 pinch of salt (very important for flavor)
  • 1–2 tbsp almond milk (for a creamy texture)
  • 2 tbsp sugar-free chocolate chips

Step 1

I start by adding the chickpeas to a blender or food processor. Then I add the peanut butter, the maple syrup, the vanilla extract, and a small pinch of salt. The salt may seem simple, but it really helps bring out that cookie dough flavor and makes everything taste much more balanced. This is the base of the recipe, so I like to make sure everything goes in first before blending.

Step 2

Next, I blend everything until the mixture starts to look smooth and creamy. At first, it can look a little thick or slightly grainy, and that is completely normal. I usually stop once or twice to scrape down the sides so everything blends evenly. If it feels too thick, I add a little almond milk, just one spoonful at a time. That way, I can control the texture better and keep it soft and dough-like instead of making it too runny.

Step 3

Once the mixture is smooth, creamy, and looks like real cookie dough, I transfer it into a bowl. Then I stir in the sugar-free chocolate chips by hand. I like doing this at the end because it keeps the chocolate pieces whole and gives the cookie dough that classic texture. At this point, it already smells sweet, soft, and really comforting.

Step 4

After that, I place it in the fridge for about 30 to 60 minutes. This step makes such a big difference. The texture becomes a little firmer, the flavors come together better, and it tastes even more like actual cookie dough. If I have time, I always let it chill first, because it honestly tastes so much better that way.

Step 5

Then it is ready to enjoy. I usually eat a small portion when I want something sweet but still a little more balanced. It feels like a treat, but it is made with simple ingredients and comes together so easily. That is what I love most about it. It tastes indulgent, but it still fits so much better into a healthy routine.

For me, this is one of those recipes I come back to again and again, especially on days when I’m craving something sweet but still want to feel good afterward. I usually enjoy it in the afternoon or in the evening when I want a little treat without going off track. It feels comforting, a bit indulgent, but still light enough that I don’t feel heavy or sluggish after eating it.

What I really love is how it supports me without feeling restrictive. It gives me a bit of protein and fiber, which helps keep me full and satisfied, so I’m less likely to keep snacking. At the same time, it’s made from simple ingredients, so my body feels good, my energy stays stable, and I don’t get that typical sugar crash.

Overall, it’s just a really nice balance between something sweet and something nourishing, and that’s exactly what makes it so easy to include in a healthy routine. And if you have any ideas or little tweaks, I’m always open to trying new variations 🤍🍪
