Step 1: Prepare the fruit
I begin by cutting the watermelon into small seedless cubes and washing the strawberries well, because I want everything to feel fresh, clean, and ready before I start blending. If I have a little extra time, I like to chill the fruit beforehand, since colder fruit gives the popsicles a fresher taste and a slightly nicer texture once frozen. I also squeeze a little fresh lime juice and keep the honey nearby, although I only use it if the fruit is not naturally sweet enough on its own.

Step 2: Blend everything until smooth
